The chestnut fondant from Domaine de Sévenier, a 100% Ardèche delicacy

At Domaine de Sévenier, gastronomy is as much a matter of the heart as it is of the terroir. And when the owner shares her mother's family recipe for chestnut fondant, you know you're holding a typical Ardèche gourmet treasure. Simple, generous, and full of sweetness, this recipe is redolent of conviviality and childhood memories.

Chestnuts, the emblem of Ardèche

It is impossible to talk about Ardèche without mentioning its chestnuts, the emblematic fruit of the Cévennes Ardèche region. Here, they come in all forms: flour, cream, jam... and even craft beer! With its AOP label, the Ardèche chestnut embodies ancestral know-how, passed down from generation to generation.

The recipe for chestnut fondant

A dessert that is as quick to prepare as it is irresistible to eat, perfect for ending a meal at La Table de Seibel, the restaurant at Domaine de Sévenier, or to recreate at home to prolong the flavours of your holiday.

  • 100 g butter
  • 100 g chocolate (dark, milk or praline, according to taste)
  • 500 g chestnut jam
  • 3 eggs

Preparation :

Melt the butter and chocolate. Add the chestnut jam and mix well. Then add the eggs one by one, then pour the mixture into a buttered mould. Bake at 180°C for 25 to 30 minutes. Allow to cool before serving — even better with a scoop of vanilla ice cream or a spoonful of local crème fraîche.
