Ingredients (serves 6)

  • 1 kg hake or cod
  • 4 eggs
  • 250 ml prepared tomato sauce
  • 150 ml milk
  • Salt and pepper

Method

Place the fish in a saucepan and cover with cold water. Season with salt and pepper.

Bring gently to the boil, then reduce the heat and simmer for 20 to 25 minutes. Remove the fish from the pan and allow it to cool slightly before removing the skin and any bones.

Flake the fish into a large bowl. Add the beaten eggs, tomato sauce and milk, then mix well. Season again with salt and pepper to taste.

Pour the mixture into a buttered loaf tin and cook in a bain-marie (water bath) for around 45 minutes.

Leave to cool before serving. Enjoy chilled with homemade mayonnaise, if possible, and a fresh green salad.
