Ingredients
Serves 5
40 g butter
1 kg chuck beef
200 g smoked belly bacon
400 g onions
30 g brown sugar
5 slices gingerbread (spiced bread)
2 tablespoons mustard
1 bouquet garni
1 L bière de garde (strong, traditional French beer)
0.5 L veal stock
Method
Sear the beef and season with salt and pepper.
Transfer the browned meat to a casserole dish, then sauté the onions and bacon until nicely coloured.
Add the brown sugar to create a caramel.
Deglaze with the beer and allow to reduce for 3 minutes.
Add the onions and bacon back to the meat.
Add enough veal stock to just cover the ingredients and add the bouquet garni.
Place the slices of gingerbread spread with mustard into the cooking liquid.
Cover and cook for around 3 hours on a low heat.
